10.—(a) Carcases of birds to be subjected to an immersion chilling process in accordance with the process described in paragraph 11 below shall, immediately after evisceration, be thoroughly washed by spraying and immersed without delay. The spraying shall be carried out by means of equipment which washes both the internal and external surfaces of the carcases efficiently and in accordance with the requirements of paragraph (b) below.
(b)For carcases weighing—
(i)not more than 2.5 kg, at least 1.5 litres of water shall be used per carcase,
(ii)between 2.5 kg and 5 kg, at least 2.5 litres of water shall be used per carcase,
(iii)5 kg or more, at least 3.5 litres of water shall be used per carcase.
